Cheddar Scalloped Potatoes

  1. Puncture potatoes with fork.
  2. Microwave potatoes on high for about 8 minutes.
  3. (Time may vary).
  4. Cool then chop into bit size pieces or scallop.
  5. Cook onion until tender in 2 tbs margarine in a med size pot or fry pan.
  6. Stir in soup, potatoes and pepper to taste.
  7. Boil then reduce heat to low, cover and simmer 5 minutes.
  8. Sprinkle with bacon and parsley if desired.
