Louisiana Crab (Or Seafood) Gumbo Recipe
- 3 slices minced bacon
- 10 to 12 pods sliced floured okra
- 1 minced sweet red onion
- 1 green pepper, minced
- 1 red pepper, minced
- 1 yellow pepper, minced
- 1/2 c. minced celery, some leaves
- 3 cloves minced garlic
- 1/3 c. butter
- 3 tbsp. extra virgin olive oil
- 1 pound can tomatoes">tomatoes or possibly fresh tomatoes">tomatoes
- 1 (No. 2) can tomato or possibly V-8 juice
- 1/2 teaspoon salt
- Dash of cayenne to taste
- 2 lbs. crab (fresh or possibly imitation)
- 1 pound prawn, 1/2 pound imitation lobster, the more seafood the better
- Add in butter, extra virgin olive oil, bacon to a large kettle.
- Simmer till bacon is crisp.
- Add in floured okra, onion, green, red and yellow pepper, minced celery, minced garlic.
- Cook till tender, but not browned.
- Add in tomatoes, juice, salt, cayenne and seafood.
- Let simmer for about an hour.
- Serve in bowls with garlic bread.
- Should be the consistency of a thick soup.
