Sweet Chestnut Paste Made with Ice Cream

  1. Warm the chestnuts in the microwave for about 1-2 minutes and mash.
  2. While mashing, melt the ice cream in the microwave for about 30 seconds.
  3. Mix the chestnuts and melted ice cream.
  4. Strain through a strainer or sieve to smooth.
  5. Add brandy or rum as desired.
  6. You can use it as-is on toast, or on pancakes, or mix with whipped cream to make a chestnut cream.
  7. Mix it with whatever ice cream you have for a chestnut ice cream.
  8. It makes a large batch, so I store it in a tub.
  9. If putting it in a pastry bag for something like Mont Blanc, mix with milk, heavy cream, or whipped cream until it can be piped out easily!
