Sweet Chestnut Paste Made with Ice Cream
- 200 grams Peeled and boiled chestnuts
- 100 grams Vanilla ice cream
- 1 Brandy or rum
- Warm the chestnuts in the microwave for about 1-2 minutes and mash.
- While mashing, melt the ice cream in the microwave for about 30 seconds.
- Mix the chestnuts and melted ice cream.
- Strain through a strainer or sieve to smooth.
- Add brandy or rum as desired.
- You can use it as-is on toast, or on pancakes, or mix with whipped cream to make a chestnut cream.
- Mix it with whatever ice cream you have for a chestnut ice cream.
- It makes a large batch, so I store it in a tub.
- If putting it in a pastry bag for something like Mont Blanc, mix with milk, heavy cream, or whipped cream until it can be piped out easily!
