Grandma Lois's Chicken Enchilada Pie Recipe
- 1 whole chicken
- 1 can condensed mushroom soup
- 1 can condensed cream of chicken soup
- 1 can beef bouillon soup or possibly 1 bouillon cube, dissolved in a c. of warm water
- 1 pound Cheddar cheese, shredded
- 1 can green chili peppers, minced
- 1 (10-12 count) pkg. corn tortillas
- Cook chicken, bone and chop; brown onions and combine with soup.
- Blend well.
- Place in greased baking dish in layers, beginning with tortillas, chicken, soup mixtures and grated cheese.
- Repeat layers till all is used.
- Bake 30 min at 325 degrees.
- Can be frzn till ready to bake.
