Stir-Fry Vegetables

  1. In a large skillet briefly saute garlic in the olive oil on medium-high.
  2. Add carrots and cook 3 minutes.
  3. Add onions and continue cooking and stirring often.
  4. Add broccoli stalks and water.
  5. Cover; simmer about 5 minutes.
  6. Add zucchini, broccoli flowerets, mushrooms and seasonings.
  7. Stir well; cover and continue to cook until vegetables are tender.
  8. Add tomato wedges and cook briefly.
  9. Serve immediately.
  10. Delicious over rice.
