One Pot Pea and Bacon Pasta
- 6 slices Bacon, Chopped
- 3 cups Chicken Stock
- 1- 1/4 cup Whole Milk
- 12- 1/2 ounces, weight Mini Pasta Shells
- 1 cup Peas, Frozen Or Fresh
- Pepper To Taste
- 1/2 cups Sour Cream With Herbs
- 1- 1/2 ounce, weight Parmesan, Shredded
- Chopped Fresh Parsley, As Needed
- Salt To Taste
- Heat a large pot over medium high heat and cook bacon until browned and crispy.
- Remove from pan and set aside.
- Leave as much or as little bacon fat in the pot as you like.
- Pour stock and milk into hot pan (careful about splattering!)
- and add pasta shells, peas and pepper.
- Bring to a boil and cook for about 7 minutes or until pasta is ready.
- Take pot off heat and quickly stir in sour cream.
- Add cheese, parsley and crispy bacon to pasta and combine.
- Season to taste with salt.
- Serve immediately with extra cheese and parsley if you like.
