Shrimp Salad
- 4 c. hot cooked rice
- 1/4 c. French dressing
- 3/4 c. mayonnaise
- 2 Tbsp. minced onion
- 1/2 tsp. curry powder
- 1/2 tsp. salt
- 1/4 tsp. white pepper
- 3 drops of hot sauce
- 1/2 tsp. dry mustard
- 1 c. diced celery
- 1 1/2 c. cooked peas
- 2 cans shrimp
- lettuce
- Combine rice and French dressing; cool to room temperature. Mix mayonnaise, onion and seasonings.
- Place celery and peas in large mixing bowl; pour in mayonnaise mixture.
- Add rice mixture, toss lightly with fork.
- Chill salad well.
- Drain and chill shrimp. Add shrimp to salad just before serving.
- Turn salad into lettuce lined bowl.
- Garnish with tomato wedges.
- Makes 8 servings.
