Tagliatelle with Simple Tomato and Mascarpone Sauce
- 3-58 ounces, weight Tagliatelle
- 1 Tablespoon Sunflower Oil
- 2 cloves Garlic
- 3 whole Tomatoes (large), Finely Diced
- 1 Tablespoon Tomato Puree
- 1 teaspoon Caster Sugar
- 3-58 ounces, weight Mascarpone Cheese
- 2 Tablespoons Fresh Parsley Or Basil, Chopped
- Salt And Pepper
- Boil the pasta according to the instructions on the package.
- In a large frying pan, heat the oil and over a medium heat, soften the garlic.
- After a couple of minutes, add the tomatoes, tomato puree and sugar, and leave to stew over medium-low heat for 10 minutes.
- Add the mascarpone and stir until it has melted into the sauce.
- Add the parsley or basil and season to taste with salt and pepper.
- When it is ready, drain the pasta and add it to the pan with the sauce.
- Mix well and then serve.
