Tagliatelle with Simple Tomato and Mascarpone Sauce

  1. Boil the pasta according to the instructions on the package.
  2. In a large frying pan, heat the oil and over a medium heat, soften the garlic.
  3. After a couple of minutes, add the tomatoes, tomato puree and sugar, and leave to stew over medium-low heat for 10 minutes.
  4. Add the mascarpone and stir until it has melted into the sauce.
  5. Add the parsley or basil and season to taste with salt and pepper.
  6. When it is ready, drain the pasta and add it to the pan with the sauce.
  7. Mix well and then serve.
