Baby Sardine & Tomato Saute with Polenta

  1. Remove the heads and insides from the baby sardines.
  2. Open them with your finger and remove the bones.
  3. Marinate in white wine and the herbs.
  4. Combine the panko, Parmesan cheese, and herbs to create a fragrant panko mixture.
  5. Dry the sardines with a paper towel.
  6. Coat the sardines completely with the panko mixture.
  7. Place the garlic and the olive oil in a pan and heat until fragrant.
  8. Add the sardines and fry on low heat.
  9. They taste best if well browned.
  10. Lastly add the tomato sauce.
  11. This is the package of polenta that I used.
  12. Add salt to hot water and gradually add the cornmeal while stirring.
  13. Once all of the cornmeal has been added, continue stirring.
  14. Stir continuously for about 20 minutes.
  15. Since the flavor is so simple, I added some shredded cheese.
  16. Continue stirring and kneading until it becomes the texture of mashed potatoes.
  17. Then it's ready.
  18. Arrange the polenta and sardines on a plate and it's all done.
