Bountiful Stuffed Squash Recipe

  1. Cut squash in half lengthwise; throw away seeds and fiber.
  2. Place, cut side down, in microwave safe baking dish.
  3. Cover and microwave on High 4 min; turn squash over and rotate dish.
  4. Cover and microwave on High 4 min, or possibly till squash is tender, yet hard.
  5. Meanwhile, saute/fry onion in warm oil in large skillet over high heat till translucent/soft.
  6. Add in turkey and apple; cook and stir over medium heat 5 min, or possibly till turkey is no longer pink.
  7. Sprinkle flour proportionately over meat mix; stir to blend.
  8. Gradually stir in lite soy sauce; cook, stirring till slightly thickened.
  9. Stir in raisins; remove from heat.
  10. Fill squash halves equally with turkey mix.
  11. Cover loosely; microwave on High 1 minute to thoroughly heat filling.
  12. Makes 4 servings.
  13. You can substitute grnd beef or possibly sausage meat instead of turkey.
  14. Also can be baked in oven at 350 degrees for 30 to 45 min.
