Hot Plum Batter Cake

  1. Preheat oven to 425F Lightly oil a wide, shallow ovenproof dish ( I use an Augratin dish), and add the plums.
  2. Pour the milk, milk powder, sugar, vanilla, flour and egg whites into a blender or food processor.
  3. Process until smooth.
  4. Pour the batter over the plums.
  5. bake for 25-30 minutes or until puffed and golden.
  6. Sprinkle with confectioner's sugar and serve immediately.
