Apple Pie Bars Recipe
- 4 c. peeled tart cooking apples sliced thinly
- 1 can apple juice (6 ounce.)
- 1 tsp grnd cinnamon
- 1/4 tsp grnd nutmeg
- 1 Tbsp. cornstarch
- 1/2 c. sugar
- 3 c. all-purpose flour
- 1 c. sugar
- 1 tsp baking pwdr
- 1 c. butter softened
- 2 x Large eggs slightly beaten
- FOR FILLING: In a large saucepan, combine apples, apple juice, cinnamon and nutmeg.
- Cook over medium high heat till boiling, stirring occasionally.
- Combine cornstarch and the 1/2 c. sugar.
- Stir into boiling mix, cook and stir till thickened and bubbly.
- Remove from heat; cold slightly.
- FOR CRUST: In a large mixer bowl stir together flour, the 1 c. sugar, baking pwdr and 1/4 tsp.
- salt.
- Add in butter and Large eggs.
- Beat on low speed till mix is blended and crumbly.
- Press 2/3 of crumb mix (3 1/2 c.) into a greased 15 x 10 x 1 inch pan.
- Spread apple mix proportionately over crust.
- Sprinkle remaining crumbs over apples.
- Bake at 375 degrees for 25 to 30 min or possibly till golden.
- Cold, cut into bars.
- Makes 48.
