Mango Cucumber Salsa
- 2 whole Ripe Mangoes Peeled, Pitted And Diced
- 2 whole Persian Cucumbers, Diced
- 1/2 whole Sweet Onion, Diced
- 2 whole Red Chiles (or More, To Taste), Finely Chopped
- 1/2 bunches Fresh Cilantro, Finely Chopped
- 1 Lime, Juiced
- Salt And Freshly Ground Black Pepper, To Taste
- Combine the mango, cucumber, onion, chiles and cilantro in a medium-sized bowl.
- Add the lime juice and toss; season with salt and pepper.
- Cover the salsa and refrigerate for about 30 minutes to let the flavours meld.
