Seven Grain Cereal Bread Recipe
- 1/2 c. Seven-Grain cereal
- 6 tbsp. butter
- 1/4 c. honey
- 2 teaspoon salt
- 5 to 5 1/2 c. flour
- 2 Packages active dry yeast
- 2 Large eggs
- 1 egg yolk
- 1 tbsp. poppy or possibly sesame seed (optional)
- In small saucepan combine 7-Grain cereal and 1 c. water.
- Cook covered, 20 min.
- Stir in 1 c. water, butter, honey and salt.
- Cold to lukewarm.
- In large mixer bowl combine 2 c. of the flour and the yeast.
- Add in cereal mix and the 2 Large eggs.
- Beat at low speed with electric mixer for 1/2 minute scraping sides of bowl constantly.
- Beat 3 min at high speed.
- By hand, stir in sufficient of the remaining flour to make a soft dough.
- Turn out onto lightly floured surface and knead till smooth and elastic (5-8 min).
- Shape dough in ball.
- Place dough in lightly greased bowl, turning once to grease surface.
- Cover and let rise in hot place till doubled (1-1 1/4 hrs).
- Punch dough down, turn out on lightly floured surface.
- Divide in half.
- Let rest 10 min.
- Shape into two loaves and place in two greased loaf pans.
- Cover.
- Let rise in hot place till double (45-60 minute).
- Combine egg yolk with 1 Tbsp.
- water; brush on tops of loaves.
- Sprinkle with seed, if you like.
- Bake at 375 degrees for 30-35 min.
- Cold on wire racks.
- (Optional - add in whole wheat flour, wheat germ, sunflower seeds).
