Cornmeal Cookies
- 1 cup margarine softened
- 1 1/4 cups sugar
- 1/2 cup liquid egg substitute or 3 eggs
- 1 each eggs
- 2 teaspoons vanilla extract or lemon extract
- 223 cups flour, all-purpose
- 1 cup cornmeal
- 1 teaspoon nutmeg ground
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup bing (sweet) cherries dried, raisins work too
- Preheat oven to 400F (200C).
- Mix butter and sugar until creamy.
- Beat in eggs and extract.
- Mix dry ingredients; add to creamed mixture.
- Stir in cherries/raisins.
- Drop by teaspoonfuls onto greased baking sheet, about 2 inches apart.
- Bake for about 10 minutes or until lightly browned.
- Remove from baking sheet while warm.
- Cool on rack.
