Ritz Poppy Seed Chicken
- 1/2 cups Vegetable Oil
- 4 whole Boneless, Skinless Chicken Breast Halves
- 10- 1/2 ounces, fluid Cream Of Chicken Soup
- 10- 1/2 ounces, fluid Cream Of Mushroom Soup
- 1 cup Sour Cream
- 8 ounces, weight Ritz Crackers
- 1 Tablespoon Poppy Seeds
- 1/2 cups Butter
- Heat oil in a skillet over medium-high heat.
- Reduce heat to medium, add chicken and cook until chicken is no longer pink in the middle (this will probably take 5-6 minutes per side, depending on the thickness of your chicken breast halves).
- Remove from heat and set aside.
- Preheat oven to 350 F.
- Cut chicken into bite size pieces.
- Place chicken in a bowl with cream of chicken soup, cream of mushroom soup and sour cream.
- Stir together.
- Put mixture into a 9x13 inch baking dish.
- In a separate bowl, combine the crushed crackers with the poppy seeds.
- Stir butter into the cracker mixture and spread evenly over the chicken.
- Bake for 30 minutes.
