Ritz Poppy Seed Chicken

  1. Heat oil in a skillet over medium-high heat.
  2. Reduce heat to medium, add chicken and cook until chicken is no longer pink in the middle (this will probably take 5-6 minutes per side, depending on the thickness of your chicken breast halves).
  3. Remove from heat and set aside.
  4. Preheat oven to 350 F.
  5. Cut chicken into bite size pieces.
  6. Place chicken in a bowl with cream of chicken soup, cream of mushroom soup and sour cream.
  7. Stir together.
  8. Put mixture into a 9x13 inch baking dish.
  9. In a separate bowl, combine the crushed crackers with the poppy seeds.
  10. Stir butter into the cracker mixture and spread evenly over the chicken.
  11. Bake for 30 minutes.
