Creamy Zucchini Casserole Recipe
- 1 1/2 c. zucchini, sliced
- 1 tbsp. butter
- 1/2 pound Velveeta cheese, cubed
- 1/4 c. lowfat milk
- 1 1/2 c. macaroni, cooked and liquid removed
- 1 1/2 c. cottage cheese
- 1/8 teaspoon garlic pwdr
- 3/4 c. French fried onions
- Saute/fry zucchini in butter till tender.
- Heat cheese and lowfat milk over low heat.
- Stir till smooth.
- Combine all ingredients EXCEPT onions.
- Spoon into a 1 1/2 qt casserole dish.
- Bake at 375 degrees for 30 min.
- Top with onions continue baking 3 to 5 min or possibly till onions are golden.
