Louise's Sweet N Sour Pork
- 1 12 lbs lean pork shoulder (thinly sliced) or 1 12 lbs side pork (thinly sliced)
- 2 tablespoons bacon fat
- 1 (19 ounce) can pineapple chunks
- 12 cup water
- 12 teaspoon salt
- 13 cup vinegar
- 1 tablespoon soya sauce
- 14 cup brown sugar
- 34 cup green pepper, thinly sliced
- 2 tablespoons cornstarch
- 12 cup onion, thinly sliced
- Cook meat the night before in hot bacon fat until brown.
- Drain pineapple (keep syrup).
- Combine water, brown sugar and vinegar, corn starch, salt, soya sauce and 3/4 to 1 cup of pineapple syrup.
- Cook until clear and slightly thickened (2 minutes).
- Add meat, cook covered over low heat, for 1 hour or until tender.
- Refrigerate 30 minutes.
- Before serving, heat mixture until hot.
- Add green peppers, pineapple and onions.
- Cook for 2 minutes.
- Serve with hot fluffy rice.
