Shred Me up Slaw
- 12 cup shredded carrot
- 12 cup shredded beet
- 12 cup finely sliced kale
- 14 cup shredded squash
- 3 tablespoons lemon juice
- 12 teaspoon sea salt
- In bowl, toss together vegetables.
- Add lemon juice and salt.
- Toss well and set aside for 10 minutes or until softened.
- Variations: use lime juice instead of lemon juice.
- Use chard instead of kale.
- For a boost of protein, add 3 tablespoons raw shelled hemp seeds.
