Roasted Veg Quinoa

  1. Heat oven to 400F.
  2. Cut carrots & onion and toss with 2 tbsp oil, herbs, salt & pepper.
  3. Roast for 30 min, stirring once.
  4. Meanwhile, heat quinoa with 1.25 cups water to boiling.
  5. Reduce heat and Simmer 16 min.
  6. Add chopped greens and cover for 5-10 min.
  7. Whisk miso, lemon juice & remaining olive oil.
  8. Add quinoa mixture.
  9. Divide into bowls, top with roasted veg and remaining dressing.
