Lime Thyme Potatoes
- 14 cup margarine, melted
- 1 tablespoon lime juice
- 1 teaspoon lime zest
- 1 tablespoon thyme, minced
- 3 large potatoes
- 14 cup romano cheese
- 12 teaspoon salt
- 14 teaspoon paprika
- In a large bowl, combine the margarine, lime juice, lime peel, and thyme.
- Cut a potato into 8 wedges.
- Add to mixture.
- toss to coat thoroughly.
- Place wedges skin side down on a greased baking sheet.
- Bake at 400 for 20-25 minutes or until almost tender.
- Combine cheese, salt and pepper and sprinkle over potatoes.
