Herb Salad with Goats Cheese
- 1 bunch of fresh marjoram, leaves picked
- 8 tablespoons extra virgin olive oil
- 7 to 8 ounces good-quality French goats' cheese
- 2 good handfuls of arugula
- 1 fennel bulb, halved and very finely sliced
- A handful of good pitted black olives
- 1 bunch of fresh basil, leaves picked
- Juice of 1/2 a lemon
- Sea salt and freshly ground black pepper
- 2 red chillies, deseeded and finely sliced
- Preheat your oven to 400F.
- Chop or pound your marjoram and add to a bowl with a couple of tablespoons of olive oil and a pinch of pepper.
- Rub this mixture all over the goats cheese then bake in the preheated oven for around 10 minutes until nice and golden.
- Add your arugula, fennel, olives and basil to a bowl and dress your salad with around 6 tablespoons of extra virgin olive oil and your lemon juice, and season.
- Divide onto 4 plates, crumble over your tasty goats' cheese and sprinkle over your chilli to finish... fantastic!
