Truffle-Wrapped Cherries

  1. Combine cream, butter and sugar; bring to a boil over medium heat.
  2. Remove from heat; add chocolate.
  3. Stir until melted.
  4. Chill mixture until firm enough to handle, 3 to 4 hours.
  5. Wrap each cherry in about 1 teaspoon truffle mixture.
  6. Chill Chocolate Coating.
  7. Partially melt chocolate over hot water.
  8. Remove from heat and continue stirring until completely melted.
  9. Dip cherries in melted chocolate; place on waxed paper lined tray.
  10. Chill to set chocolate.
