Truffle-Wrapped Cherries
- 13 cup whipping cream
- 2 tablespoons butter
- 2 tablespoons granulated sugar
- 4 semi-sweet chocolate baking squares
- 24 maraschino cherries, with stems
- 6 semi-sweet chocolate baking squares
- Combine cream, butter and sugar; bring to a boil over medium heat.
- Remove from heat; add chocolate.
- Stir until melted.
- Chill mixture until firm enough to handle, 3 to 4 hours.
- Wrap each cherry in about 1 teaspoon truffle mixture.
- Chill Chocolate Coating.
- Partially melt chocolate over hot water.
- Remove from heat and continue stirring until completely melted.
- Dip cherries in melted chocolate; place on waxed paper lined tray.
- Chill to set chocolate.
