Vegan Frosted Sugar Cookie Bars

  1. COOKIES:.
  2. Preheat oven to 375.
  3. Grease or spray a 9x13 casserole dish.
  4. In a medium bowl, combine flour, baking powder, and salt.
  5. Set aside.
  6. In a large bowl, cream together butter and sugar until light and fluffy, about 3 minutes.
  7. Add egg replacer and combine well.
  8. Add sour cream and vanilla and mix until completely blended.
  9. Slowly add the flour mixture and stir until well combined.
  10. Gently press the dough into the greased baking dish and spread out with hands.
  11. Bake 17-20 minutes, or until edges become lightly golden.
  12. Set aside to cool completely.
  13. FROSTING:
  14. In a medium bowl, cream together butter, powdered sugar, and milk until light and fluffy.
  15. Stir in vanilla and salt, combine well.
  16. Add food coloring until desired color.
  17. Frost your cooled cookie bars evenly.
  18. Cut into squares and serve.
