Scalloped Potatoes And Hot Dogs Recipe
- 6 med. potatoes, peeled and sliced
- 1 onion, minced
- Water to cover
- 1/4 c. butter
- 1/4 c. all-purpose flour
- Salt to taste
- Pepper to taste
- 2 c. lowfat milk
- 1 1/2 - 2 c. cubed process cheese
- 1 pound warm dogs, cut into chunks
- Place potatoes, onions and sufficient water to cover in a large saucepan; cook till tender.
- Meanwhile, heat butter in another saucepan.
- Add in flour, stir till smooth.
- Season with salt and pepper.
- Add in lowfat milk and cheese stirring till cheese melts and sauce is thickened.
- Add in warm dogs and heat through.
- Drain potatoes and onion; place in a baking dish.
- Add in sauce and mix to distribute warm dogs.
- Bake at 350 degrees for 25 to 30 min.
- Yield: 8 servings.
