Zucchini Boats
- 4 md. zucchini
- 1/4 lb. pork sausage
- 1/4 cup onion, chopped
- 1/2 cup Parmesan cheese, grated
- 1/2 cup fine cracker crumbs
- 1 egg, slightly beaten
- 1/4 tsp. salt
- 1/4 tsp. thyme
- 1 dash garlic salt
- 1 dash pepper
- Cook whole zucchinis in boiling water until braely tender, about 10 minutes.
- Cut in half length-wise; scoop squash from boats and mash, Cook sausage and onion; drain.
- Stir in mashed zucchini.
- Reserve 2 tbsp.
- parmesan; mix remaining ingredients.
- Spoon into zucchini boats.
- Place in shallow baking dish.
- Sprinkle with remaining parmesan cheese.
- Bake at 350F for 25-30 minutes.
