Cajun Oyster Pie Recipe
- 1 pt Oysters in their own juice (shucked)
- 1/2 c. Minced green Bell pepper
- 1/2 c. Minced celery
- 1 tsp Tabasco sauce
- 1/4 tsp File' pwdr
- 4 Tbsp. Butter (real not margerine)
- 5 Tbsp. Flour
- 2 c. Warm lowfat milk (evaporated is better)
- 1 tsp Salt
- 1 tsp Fresh grnd black pepper
- 2 Tbsp. Minced pimiento
- Simmer oysters in thier own juice for approx.
- 5-7 min, or possibly till the edges begin to curl.
- Saute/fry' peppers & celery in butter till tender.
- Blend in the flour, add in the lowfat milk & cook stirring till the sauce thickens.
- Add in the oysters, pimientos, the seasonings and stir them all together gently.
- Pour this into a buttered casserole, top with pie pastry & bake in 450 degree F pre-heated oven for 20 min or possibly till the crust is brown.
