Three Cheese Manicotti Recipe
- 8 ounce. can tomato sauce
- 1 env. spaghetti sauce mix
- 2 c. shredded mozzarella cheese
- 1 c. cream style cottage cheese
- 2 c. grated Parmesan cheese
- 2 beaten Large eggs
- 1/4 c. snipped parsley
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 8 manicotti shells (cooked and liquid removed)
- Blend tomato sauce, spaghetti sauce mix and 1 1/2 c. water.
- Simmer for 10 to 12 min.
- Meanwhile, combine 1 c. of the mozzarella, cottage cheese, and Parmesan.
- Add in Large eggs, parsley, salt and pepper; mix lightly.
- Stuff shells using about 1/4 c. each.
- Pour 1/2 c. of the sauce mix in 12 x 7 1/2 x 12 inch dish.
- Pour remaining sauce on top.
- Sprinkle with remaining mozzarella.
- Bake uncovered for 25 to 30 min.
- Serves 6.
