With Polenta (or Grits)

  1. Cook slices of bacon until done; remove from pan and fry eggs in the rendered fat.
  2. Serve over creamy polenta or grits, with an egg on top or some shredded cheese stirred in if you like.
  3. Bacon goes on top.
