Simple Bean Salad
- 2 12 cups celery, thinly sliced
- 1 bunch green onion, trimmed and thinly sliced
- 1 (16 ounce) can red kidney beans, drained and rinsed
- 1 (16 ounce) can garbanzo beans, drained and rinsed
- 1 (16 ounce) can black-eyed peas, drained and rinsed
- 1 (15 ounce) can carrots, sliced and drained
- 1 (8 ounce) can cut green beans, drained
- 1 (3 ounce) jar stuffed green olives, drained and halved (optional)
- 1 (2 1/2 ounce) can black olives, sliced and drained
- 12 cup parsley, finely chopped
- 12 cup olive oil
- 12 cup red wine vinegar
- 18 teaspoon ground black pepper
- 1 garlic clove, minced
- Preparation Time: Approximately 10 minutes.
- Preparation:
- Combine the celery, green onions, kidney beans, garbanzo beans, black-eyed peas, carrots, green beans, green olives if desired, black olives and parsley in a large bowl.
- Mix the olive oil, vinegar, pepper and garlic in a small bowl.
- Toss with the vegetables and refrigerate until chilled through.
- Servings: 12.
