Bacon Cheddar Cheese Soup Recipe

  1. In a large saucepan over medium heat, cook bacon 6 min, till crisp.
  2. Remove and drain on paper towels.
  3. Crumble bacon.
  4. Add in onion to bacon fat in saucepan; cook 3 min, till onion just begins to brown.
  5. Add in mustard, pepper and broth.
  6. Bring to a boil.
  7. Reduce heat to low.
  8. Whisk in thickener.
  9. Add in half-and-half, cheese and paprika; stir till cheese is melted.
  10. Ladle soup into four heated soup bowls.
  11. Garnish with crumbled bacon.
  12. This recipe yields 4 servings.
