Turkey Meatloaf with Cranberry Sauce
- 1 1/2 pounds ground turkey
- 1/4 cup finely chopped yellow onion
- 1/2 cup peeled and grated carrot
- 1/4 cup finely chopped celery
- 1 cup coarse dried bread crumbs
- 1/2 cup chicken broth
- 1/2 teaspoon dried sage
- 1/2 teaspoon poultry seasoning
- 1 large egg, lightly beaten
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1 cup homemade or canned cranberry sauce, slightly drained, at room temperature
- Fresh sage leaves for garnish
- In a large bowl, combine all the ingredients except the cranberry sauce and sage leaves and mix well.
- Turn the mixture into a lightly sprayed or oiled 9-by-5-inch loaf pan and gently pat down.
- Bake until the loaf is firm and the top is lightly browned, about 1 hour.
- Spread the cranberry sauce on top of the loaf and let stand in the pan for 5 to 10 minutes before serving.
- Remove the loaf from the pan and transfer to a platter.
- Garnish with sage leaves
