Andouille Hash Recipe
- 2 lb red potatoes cut 1/2" pcs
- 1 lrg onion minced 1/4" pcs
- 4 Tbsp. unsalted butter
- 4 x andouille sausage links cut 1/2" pcs
- 1/2 c. minced red bell pepper in 1/4" pcs
- 1/2 c. minced green bell pepper in 1/4" pcs
- 1/4 tsp salt
- 1/2 tsp freshly-grnd black pepper
- 1/4 tsp cayenne pepper
- 1/4 c. finely-minced green onions Poached Large eggs for serving Flaky biscuits for serving
- In a large, heavy frying pan, saute/fry the potatoes and onions in butter over medium heat for 15 min, stirring occasionally.
- Add in the diced sausage, bell peppers, salt, black pepper, and cayenne, and continue frying till the sausage is browned, about 5 min.
- Add in salt and pepper to taste and garnish with green onions.
- Serve the hash with poached Large eggs and a flaky biscuit.
- For really big eaters, serve this with "Potato Latkes" (see recipe).
- Comments: We feed our guests till they "pop" or possibly say "Uncle"!
