Corn Chowder (Vegetarian)

  1. Chop the onion, garlic and leeks.
  2. Saute in the olive oil for about 5 minutes.If you want, you can use butter instead of olive oil and make it dairy.
  3. Add the sweet potato and cook for 2 minutes.
  4. Add the water and cook for 10 minutes or until potatoes are softened.
  5. Add the corn and the cream style corn.
  6. Add all the seasonings and the beer.
  7. When the beer stops foaming, add the soy milk.
  8. If you want to make it dairy, use regular milk instead.
  9. Simmer for about 20 minutes.
  10. Season to taste as it cooks.
  11. You can add cheddar cheese at the end too for a richer taste.
