Sesame-Lime Rice

  1. Bring the water to a boil in a medium saucepan.
  2. Add rice; season with salt and pepper.
  3. Return to a boil; reduce heat.
  4. Cover; simmer until rice is tender and has absorbed all liquid, 15 to 17 minutes.
  5. Remove from heat; let stand, covered, 5 minutes.
  6. Add sesame seeds, oil, and lime zest and juice.
  7. Season with salt and pepper.
  8. Fluff with a fork, then toss to combine and serve.
