Fudge Cake
- 4 ounces semisweet chocolate, chopped
- 12 cup hot water
- 1 12 cups sugar
- 2 cups cake flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 12 cup butter
- 3 eggs
- 1 teaspoon vanilla extract
- 23 cup buttermilk
- 14 cup butter, melted
- 2 ounces semisweet chocolate, melted
- 14 cup light cream
- 2 cups sifted icing sugar
- 1 teaspoon vanilla extract
- Preheat oven to 350 degrees.
- Generously grease 2 9 inch round layer pans.
- Combine chocolate and hot water in the top of a double boiler and heat until chocolate melts.
- Add 1/2 cup sugar and cook 2 minutes.
- Allow to cool slightly.
- Sift flour with baking soda and salt.
- Sift 2 more times.
- Cream butter with remaining sugar until light and fluffy.
- Add eggs, one at a time, beating thoroughly after each addition.
- Stir in vanilla, then add flour alternately with buttermilk, beating well.
- Add chocolate mixture and beat well.
- Pour batter into pans and bake 25 to 30 minutes, or until a toothpick inserted in center comes out clean.
- Allow to cool.
- While cake cools, prepare frosting.
- Mix melted butter and chocolate then add remaining ingredients and blend well.
- Spread cake with chocolate frosting.
