Caesar Dressing

  1. In metal pan, combine oil and garlic.
  2. Bake at 425 until garlic is tender and 7 shades darker.
  3. Stirring occasionally.
  4. Separate garlic from the oil and add garlic to food processor while still hot.
  5. Puree garlic, slowly drizzling oil as needed to puree.
  6. Then add Parmesan cheese a little at a time until blended well and has a smooth consistency.
  7. While garlic is roasting, combine all dressing items in mixing bowl and mix well.
  8. Set aside.
  9. Combine roasted garlic puree and dressing and mix well adding black pepper and salt.
  10. Taste for proper flavor, bring any questions or concerns to your chef or supervisor.
  11. Label, date and place in proper place in the cooler.
