Caesar Dressing
- 1 cup Olive oil
- 2 lb Peeled garlic
- 3 cup Shaved Parmesan
- 1/2 cup Distilled vinegar
- 1 quart Mayonnaise
- 2 tbsp Worcestershire sauce
- 1 cup Fresh squeezed lemon juice
- 1 tbsp Black pepper
- 2 pinch Kosher salt
- In metal pan, combine oil and garlic.
- Bake at 425 until garlic is tender and 7 shades darker.
- Stirring occasionally.
- Separate garlic from the oil and add garlic to food processor while still hot.
- Puree garlic, slowly drizzling oil as needed to puree.
- Then add Parmesan cheese a little at a time until blended well and has a smooth consistency.
- While garlic is roasting, combine all dressing items in mixing bowl and mix well.
- Set aside.
- Combine roasted garlic puree and dressing and mix well adding black pepper and salt.
- Taste for proper flavor, bring any questions or concerns to your chef or supervisor.
- Label, date and place in proper place in the cooler.
