Grilled Romaine Hearts With Tarragon Vinaigrette

  1. Whisk together the red wine vinegar, Dijon mustard, tarragon, olive oil, salt and pepper.
  2. Set aside.
  3. Slice Romaine hearts in half length-wise.
  4. Brush the cut side will olive oil or spray with vegetable oil.
  5. After grilling the rest of you meal and when the coals are low, place the Romaine hearts cut sided down over the coals.
  6. Grill for 4 minutes.
  7. (Keep an eye on these as they can burn easily!
  8. ).
  9. Remove Romaine hearts from grill.
  10. Drizzle with vinaigrette and sprinkle with crumbled cheese.
  11. Serve immediately.
