Hou Bao Daan

  1. Mix together the soy sauce and vinegar.
  2. Set aside.
  3. Heat a quarter of the oil in a small nonstick skillet over high heat.
  4. Swirl the oil to coat the bottom of the pan and crack one of the eggs into the pan.
  5. Season with salt.
  6. When the edges of the egg begin to brown and the white begins to set, fold the egg in half.
  7. Splash on a quarter of the soy-vinegar mixture and immediately remove from the skillet.
  8. Repeat with the remaining eggs and serve hot.
