Chicken Pot Pie Burger
- 1 pound Ground Chicken
- 1/4 cups Light Mayonnaise
- 2 Tablespoons Olive Oil
- 3 Tablespoons Unsalted Butter
- 1 whole Carrot, Diced
- 2 whole Celery Stalks, Diced
- 1/2 whole Yellow Onion, Diced
- 1/2 cups Peas, Frozen Or Fresh
- 3 Tablespoons All-purpose Flour
- 1- 1/4 cup Chicken Stock
- 1 cup Mozzarella, Shredded
- Salt And Pepper, to taste
- 3 Brioche Buns
- In a bowl, combine ground chicken, mayo, salt and pepper.
- Form into 2 or 3 large patties.
- Preheat a skillet to medium-high heat and add olive oil.
- Place chicken patties in skillet and cook for about 5 minutes on first side.
- Flip and continue to cook another 23 minutes.
- Remove patties from skillet and set aside.
- In same skillet, melt butter.
- Add carrot, celery, onion, peas, salt and pepper.
- Saute until veggies have softened, about 7 minutes.
- Next, sprinkle flour and cook for another minute.
- Pour chicken stock into skillet and stir until thickened, about 45 minutes.
- Once thick, remove skillet from heat.
- To make burgers, preheat broiler.
- Place bottom of brioche bun on a baking sheet.
- Top bottom bun with chicken patty and spoon carrot-pea mixture on top.
- Sprinkle some mozzarella on the gravy.
- Repeat process with remaining burgers.
- Place baking sheet under broiler for a few minutes or until cheese is nice and golden brown.
- Add top brioche bun and serve immediately!
