Creamy Scrambled Eggs on Muffins
- 2 eggs
- 2 egg whites
- 2 tablespoons reduced fat milk
- 30g block PHILADELPHIA Light Cream Cheese, cut into small cubes
- 1 tablespoon snipped chives
- black pepper, to taste
- 2 English muffins, halved and toasted
- Extra chives, to garnish
- Whisk together the eggs and milk.
- Pour into a hot non-stick frying pan.
- Cook over a medium heat, stirring occasionally with a spatula until just set.
- Fold Philly*, chives and pepper through eggs.
- Serve on toasted muffins.
- Garnish with extra chives if desired.
