Creamy Scrambled Eggs on Muffins

  1. Whisk together the eggs and milk.
  2. Pour into a hot non-stick frying pan.
  3. Cook over a medium heat, stirring occasionally with a spatula until just set.
  4. Fold Philly*, chives and pepper through eggs.
  5. Serve on toasted muffins.
  6. Garnish with extra chives if desired.
