Spicy Grilled Salmon with Garlicky Greens

  1. Sprinkle salmon with salt and pepper.
  2. Combine 2 Tbsp.
  3. olive oil, red currant jelly, mustard, black pepper, cloves and cayenne in a small bowl.
  4. Brush mixture onto salmon.
  5. Mist a grill pan with cooking spray and warm over medium-high heat.
  6. Place salmon in pan; grill for 10 to 12 minutes, turning once.
  7. (May also be baked in a 400F oven on a lightly greased baking pan for 10 to 12 minutes.
  8. If using oven method, do not turn.)
  9. In large skillet over medium heat, cook garlic in remaining 2 Tbsp.
  10. oil for 1 minute.
  11. Add spinach; cover and cook 8 minutes, stirring once.
  12. Season with salt and pepper, to taste.
  13. To serve, divide spinach onto four plates.
  14. Top with salmon and sprinkle with green onions.
