Stuffed Strip Loin Steak.
- 6 thick strip loin steak, 260-300g each
- 100 grams butter
- 10 ml olive oil
- 200 grams streaky bacon, chopped
- 3 clove garlic, chopped
- 1 small onion, chopped
- 35 grams anchovy fillets, chopped
- 150 grams cheddar cheese, grated
- Make sure that you remove your steaks from the fridge.
- It's always best to get your meat to room temperature before you cook it.
- In a preheated frying pan over a high heat, fry the bacon, onion and garlic with the olive oil.
- Set aside to cool.
- Mix the cheese and anchovies with the fried onion and bacon.
- With a sharp paring knife, cut a slit about 2cm wide and create a pocket in the steak by moving the knife deeper into the steak, most of the way through the steak.
- Be careful that you don't cut thru the sides of the steak.
- Stuff the steaks with the stuffing.
- Close the opening with a toothpick or two.
- Season with salt and pepper.
- Remember not too much salt because of the anchovies.
- Preheated a griddle pan on high heat.
- Using the butter fry the steaks for 4-5 minutes aside for meduim rare, depending on the thickness of your steaks.
- (You can also grill the steaks outside on the grill/bbq/braai) Set aside, cover and let them rest for at least 5 minutes.
