Quick & delicious egg white omelet

  1. Mix egg whites in a bowl.
  2. Add salt and pepper to taste.
  3. Set aside.
  4. Chop the spinach (rough chop).
  5. Shre cheese, set aside.
  6. Cut Avocado in half and cut out slices, set aside.
  7. Make salsa (optional): add everything in a pot of water, set over high heat until tomato skin begins to tear and chiles are soft (20min).
  8. Toss everything in a blender.
  9. Add 1/2-1cup water from where you boiled veggies.
  10. Add salt and pepper to taste.
  11. Blend.
  12. You can add more water, salt and pepper to your preference.
  13. Add oil to a pan on medium heat for 1 minute.
  14. Add the egg mixture.
  15. Let it spread and slightly cook over oil (about 1 minute).
  16. Add spinach, cheese to top of omelet.
  17. After another 15 sec.
  18. Using a spatula flip half of the omelet over to its other side to close the omelet.
  19. Then using a fork or knife poke the omelet a few times (to help cook center well).
  20. Cook about 2 min each side.
  21. Place on plate.
  22. Add avocado and salsa.
  23. Enjoy.
