Quick & delicious egg white omelet
- 2 egg whites
- 3 tbsp vegetable oil
- bunch of spinach
- 1/4 cup shredded mozzarella cheese
- 4 medium tomatoes
- 1 chile jalapeno
- 1 chile wero (yellow )
- 1 garlic clove
- Mix egg whites in a bowl.
- Add salt and pepper to taste.
- Set aside.
- Chop the spinach (rough chop).
- Shre cheese, set aside.
- Cut Avocado in half and cut out slices, set aside.
- Make salsa (optional): add everything in a pot of water, set over high heat until tomato skin begins to tear and chiles are soft (20min).
- Toss everything in a blender.
- Add 1/2-1cup water from where you boiled veggies.
- Add salt and pepper to taste.
- Blend.
- You can add more water, salt and pepper to your preference.
- Add oil to a pan on medium heat for 1 minute.
- Add the egg mixture.
- Let it spread and slightly cook over oil (about 1 minute).
- Add spinach, cheese to top of omelet.
- After another 15 sec.
- Using a spatula flip half of the omelet over to its other side to close the omelet.
- Then using a fork or knife poke the omelet a few times (to help cook center well).
- Cook about 2 min each side.
- Place on plate.
- Add avocado and salsa.
- Enjoy.
