Chilaquiles (Enchilada Casserole) Recipe
- 2 doz. corn tortillas (cut up in triangles)
- 1 chicken (boiled, deboned and cut up in cubes)
- 1 lg. onion, minced
- 1 pound each cheese">Jack and Longhorn cheese (shredded)
- 1 lg. can "Las Palmas" red chili sauce
- In large skillet, fry tortilla triangles (a few at a time) till they are crisp and golden brown.
- Take out of the skillet and place in plate lined with paper towels to absorb the oil.
- Repeat procedure till all the tortilla chips are done.
- In large bowl, place the tortilla chips, cubed chicken, shredded cheese, minced onion and red chile sauce.
- Mix well, then place in baking dish.
- Bake for 20 to 30 min at 350 degrees till cheese bubbles.
