Cilantro-Ranch Chicken Salad
- 1/3 cup southwestern seasoning
- - boneless skinless chicken breasts
- 2-2/3 cups KRAFT MAYO Fat Free Mayonnaise Dressing
- 2 cups KRAFT FREE Ranch Dressing
- 1/2 cup cilantro, chopped
- 2-1/2 Tbsp. lime juice
- 2 tsp. coarse ground black pepper
- 1 qt. canned black beans, drained, rinsed
- 1 qt. frozen corn, thawed
- 1 qt. red peppers, chopped
- 2 cups canned diced green chiles, drained
- 2 cups green onions, sliced
- Sprinkle southwestern seasoning evenly over chicken.
- Grill over medium-high heat until cooked through (165F), turning occasionally.
- Mix mayo, ranch dressing, cilantro, lime juice and black pepper in large bowl until well blended.
- Chop chicken into bite-sized pieces.
- Add to mayo mixture along with remaining ingredients; mix well.
- Cover and refrigerate several hours or until chilled.
