Bulghur And Chick Pea Salad Recipe
- 250 gm Bulgar wheat, (8oz)
- 1 x 432 gram can chick-peas, (15 1/4oz)
- 1/2 x A cucumber, minced
- 75 gm Unsalted peanuts, shelled (3oz)
- 4 Tbsp. Freshly minced chives
- 2 Tbsp. Natural yogurt
- 2 Tbsp. Extra virgin olive oil
- 1/2 x A lemon, juice of
- 1 tsp Curry pwdr
- 1 x Clove garlic, crushed
- Soak the bulgar wheat in hot water for 30 min.
- Drain it and squeeze it dry thoroughly.
- Put it in a bowl.
- Drain the chick-peas, and add in these and the cucumber, peanuts and herbs to the wheat.
- Beat together the remaining ingredients and fold them into the salad.
