Warm Couscous Salad

  1. Heat some oil in a skillet over high heat.
  2. Add cubed eggplant.
  3. When nicely browned, turn down the heat
  4. Continue frying the eggplant until soft, add minced garlic.
  5. When fragrant, add boiling water and couscous.
  6. Take off heat and cover with a lid
  7. After 10 min, fluff the couscous with a fork, then add chopped olives, cubed tomatoes, rosemary, salt and paprika
  8. Drizzle with olive oil and serve warm.
  9. Enjoy :)
