Beef & Corn Fajitas

  1. Combine sour cream and salsa in bowl; mix well.
  2. Cover; refrigerate until serving.
  3. Spray 10-inch skillet with no-stick cooking spray; add onion and green pepper.
  4. Cook over medium heat, stirring occasionally, 5-6 minutes or until vegetables are crisply tender.
  5. Stir in corn and roast beef.
  6. Continue cooking, stirring occasionally, until heated through.
  7. Heat broiler.
  8. Spoon 1/6 corn mixture onto each pita bread; top with 2 slices cheese.
  9. Broil 5 to 7 inches from heat 1-2 minutes or until cheese begins to melt.
  10. Spoon 1 tablespoon sauce over cheese.
  11. Fold pita in half.
  12. Serve with remaining sauce.
