Perzik Pofertje - Peach Fritters

  1. Sift dry ingredients together.
  2. Cream butter and sugar until light and fluffy; add eggs and beat thoroughly.
  3. Add dry ingredients to the batter alternatively with the milk.
  4. Fold in peaches, lemon juice and vanilla.
  5. Preheat oil in a large stockpot or deep fryer to 365F.
  6. Drop by teaspoonsful into hot fat and fry until golden brown.
  7. Drain well on paper towels.
  8. Serve warm with whipped cream or sprinkle with powdered sugar.
